Because its not all eggs. As you can see, they used a ton of google services, but only substituted a few with Proton. Ex. Google keep -> Joplin, Google Maps -> Magic maps. So saying that they put everything into proton is not true. It takes time to be fully independent.

I am very similar to OP. Proton right now gives good services, and is a good safety net right now for me.

Install Powertoys if you can, this at least makes windows usable (funcionality-wise, its still going to be slow as shit)

There are window managers / compositors, which fulfill kiosk mode, ex. Cage.

To decrease the amount of spam. There is a misunderstanding, the same with anti-cheat. Captchas will always be solvable, there will always be people who cheat. The point is not to eliminate all bots / cheaters, but to only have to deal with a smaller number of them.

Superproductivity is great for tasks. It can even sync issues with apps (Gitlab, Jira, etc.) Pair it with Obsidian or any note taking app and you can forget work todos outside of work.

For the windows users: Powertoys has bunch of utilities. Without this windows is unusable for me.
